Homemade Baked Beans



1 T oil
2 brown onions, chopped finely
4 T tomato paste
2x 400g can diced tomato
2 T brown sugar
2x 400g can mixed beans

Heat oil in a pot over medium heat. Add onion, cook and stir for 5 minutes or until soft.

Add tomato paste, tomato, sugar and beans, stir to combine. Bring to boil, reduce heat to low.
Simmer, stirring ocassionally, for 8 minutes or until sauce thickens. Serve warm.

Family Pizza Night

My uncle recently completed a tour of Europe, including Italia! He left as an Aussie, came back an Italian.... The pizza dough and tomato sauce were both homemade, which was a real treat.

Coupled with a salad, these Margarita pizzas were delicious!

Family Dinner

Thanks to my awesome cousin and amazing aunty, we had a delicious family dinner on the weekend. I always look forward to these!

Dinner isn't dinner in our family without a starter of cheese....

Camembert with honey and pepper. It was my first time trying this and I was pleasantly surprised at how well the cheese and honey complemented each other, along with the pepper.




Stilton coupled with Cabernet paste. Another first for me, and extremely delightful!



Prepared vegetables....


Beef cubes.


Two cans of Ayam brand satay sauce.......

....mixed with soy sauce, a large can of crushed pineapple and some fresh chopped chilli.



Vegetables, ready to add to the Satay Beef.







Chicken breast dusted with cornflour.

After frying in batches.



When completed, add to honey chilli sauce (prepared earlier).

Jubbsy's Place.....

Wine + Cheese Platters + Feast + Friends = A Great Night In!!!

Cheese platter (clockwise from left) - Castello Peppercorn, Camembert, Stilton, Havarti, Quince Paste.

The quince paste was delish!

.....the camembert was oozing and glistening.....

Stlton was my fav of the night. I almost melted when I had my first bite!

Crushing up spices for the onion bhajis.

Onion bahji, dry ingredients. 

A huge bunch of fresh coriander, straigh from Jubbsy's garden. The aroma was amazing!


Spooning the Orange Polenta Cake mixture into the tin......

....served with yoghurt mint sauce and mango chutney (not pictured).


Dahl.....

....I loved the addition of spinach.

Butter chicken, so juicy and tender.

...served with rice and bhajis.


Orange Polenta Cake, warm and moist.
